Panko breadcrumbs

It wasn’t so long ago that finding panko breadcrumbs meant trawling the web for specialist suppliers or going to the Japan Centre in the West End of London- not so easy when you live in Scotland. Happily most supermarkets now stock these breadcrumbs and I am never without a packet or two. They make the best crispy coating for fried food (see the recipe for crispy parsnips) or sprinkle over dishes for a crunchy topping. Japanese panko are much bigger and flakier than our traditional breadcrumbs so absorb less fat when frying. They also stay crisper for much longer so no worries about fried food going soggy.
