You could grill a couple of aubergines for an hour, scrape out the flesh and drain off the watery juices or you could open a jar of delicious crushed roasted eggplant (from Marks & Spencer -the specialist section of the food hall). Mix about half a jar with a crushed garlic clove, a tablespoon of lemon juice, 4 tablespoons greek yogurt and some salt and pepper (to serve 4 people). I serve this as an accompaniment to barbecued lamb but it makes a moreish dip for toasted pitta breads and raw vegetables. Jars of ‘Nduja – a fiery pork spread from Italy – can be used in myriad ways: as a sauce for pasta with a little cream and fresh chopped tomatoes mixed in or as a topping for bruschetta to name but two. They also stock my favourite brand mayonnaise Kewpie in a squirty plastic bottle- perfect for drizzling over everything.
