Sriracha

More often than not I find myself reaching for a bottle of sriracha sauce to pep up a slightly dull plate of food. Now available in most supermarkets this Thai chilli sauce is a permanent fixture in my kitchen. It is much more than just a hot sauce- and it really is hot so go easy when you squeeze the bottle. There is a bit of garlic as well as the chilli and it is this that gives it more depth of flavour than, say, a hot sauce such as Tabasco. Add a drizzle to stir-fries, casseroles, toasted sandwiches- I could go on and on. It keeps for about 8 weeks in the fridge and you probably won’t finish the bottle unless there are serious hot sauce-loving members of the household but it is not terribly expensive so can be replaced regularly without seriously denting the food budget.
