It is much easier to make two round fresh fruit scones and cut them into wedges as the blueberries get in the way of a round cookie cutter and everything becomes an unholy mess-even with frozen blueberries.  I think there is also something deeply enticing about the generous crusty wedges oozing with blueberry juice. I’m not sure they need much adornment but a little slick of butter across a split half is never not a good idea.

 

Ingredients

  • 425g self-raising flour
  • ¼ teaspoon baking powder
  • ¼ teaspoon bicarbonate of soda
  • 100g caster sugar plus extra for dusting
  • grated zest of one large orange
  • 185g unsalted butter, cold and cut into cubes
  • 1 large egg, beaten
  • 125g crème fraiche
  • 100ml milk
  • 100g frozen blueberries

Method

  1. Heat the oven to 190 °c, fan 170°c, mark 5. Put the flour, baking powder, bicarbonate of soda, sugar and orange zest in a large mixing bowl and stir to combine. Rub in the butter until no visible lumps remain. Make a well in the centre of the flour.
  2. Mix the egg, crème fraiche and milk in a jug and pour in all but two tablespoons (roughly). Gently stir the ingredients together until it is just beginning to clump together. Add the blueberries and bring the dough together with lightly floured hands. Gently fold the dough over two or three times.
  3. Tip out onto a lightly floured sheet of baking parchment and divide into two balls. Shape each into a round, about 18 cm diameter and about 3 ½ -4cm thick. Slice into 8 wedges. Repeat for the second ball.
  4. Brush the top of the scones with the reserved egg and crème fraiche liquid and sprinkle over a little caster sugar. Place on a baking sheet lined with parchment, at least 5cm apart- you may need two baking sheets. Bake for 15-18 minutes or until risen and golden. Cool on a wire rack and dust with icing sugar before serving.
