When I come up with an idea that is as simple as this, it is often tempting to expand the recipe with embellishments-to make things fancier. Most of the time I can resist the urge and admit that simple things-like this trio of ingredients- can be perfect if left well alone. That’s not to say you can’t go fancy with the ways to serve the ice cream. Sprinkle with crushed caramelised sesame seeds, pour over hot fudge sauce or sandwich the ice cream in a lightly toasted brioche bun.
- 300ml double cream
- 397g tin Carnation Caramel
- 85g tahini, mixed well before measuring
- Put the ingredients in a large mixing bowl and whip until smooth and thick. Pour into a suitable container and freeze until hard-about 8 hours. Put your feet up and read a good book.
