Serves: 12-14

I find most commercial brands of granola too sweet so I like to make up my own. You can chop and change the nuts, fruit and seeds to suit your own tastes but keep to the weights specified. The list of ingredients looks a bit daunting but this makes a big batch and it will keep for ages in an airtight container.
Ingredients
- 450g rolled oats
- 150g linseeds
- 100g chopped dates
- 100g dried cranberries
- 90g sesame seeds
- 90g pine nuts
- 75g pistachios, roughly chopped
- 75g pecans, roughly chopped
- 75g desiccated coconut
- 50g chia seeds
- 1 teaspoon ground cinnamon
- 130g coconut butter, heated to melt if solid
- 50ml rapeseed oil
- 75ml agave syrup
- 60ml maple syrup
- 15ml vanilla extract

Method
- Heat the oven to 180˚c, fan oven 160˚c, mark 4. Mix all the dry ingredients together in a large bowl. Place the coconut butter, oil, syrups and vanilla extract in a bowl and stir together. Pour over the dry ingredients and mix well.
- Spread the mixture evenly over 2 large baking trays. Bake in the oven for 12-15 minutes until the sides are starting to turn golden brown then stir well. Bake for a further 12-15 minutes and stir again and finally bake for 10 minutes. The granola should be evenly golden brown. Leave to cool completely then pour into an airtight container.
