Serves: Makes 10 sandwiches
I often refer to these no churn ices as cheat’s ice cream but this somehow infers that it is a lesser creation. This easy ice cream is a winner on every level –quick and very delicious. The cardamom is a background flavour which is the perfect partner for apricot but if you are making it for children the flavour may not be one they particularly like so leave it out and perhaps add a teaspoon of vanilla extract instead. I fill 7cm ring moulds with the whipped mixture, freeze them overnight and then, once removed from the ring the ice cream disc is halved and then sandwiched between two spiced biscuits. You, of course, can scoop the ice cream and spoon some extra apricot compote on the side.
- 397g tin condensed milk
- 450ml double cream
- Pinch of salt
- 5 cardamom pods, split and seeds crushed
- 7 heaped tablespoons apricot compote
- To serve -one quantity baked Spiced Biscuits
- Pour the condensed milk, cream and pinch of salt into a mixing bowl. Whisk until thick. Stir in the crushed cardamom seeds and apricot compote, but don’t overmix- you want veins of purée running through the ice cream. If you are not serving ice cream sandwiches you can simply spoon the mixture into a container and freeze until hard. If you are making the ice cream sandwiches you can fill ring moulds with the mixture, place them on a tray lined with baking parchment and freeze.
